Spanish Rice

This recipe appeared on the River® White Rice package in the late 1950's.


1 cup Water Maid® Medium Grain Rice or River® White Rice
1/4 cup butter
1 onion, thinly sliced
1/2 green bell pepper, diced
2 cups stewed tomatoes, with juice
salt and ground black pepper, to taste
1 cup water


1. Heat butter, margarine, or oil in saucepan. Add onion, green pepper, and rice. Cook over high heat until lightly browned.

2. Add tomatoes, water, salt and pepper; mixing well. Bring to a boil. Cover tightly, lower heat, and simmer gently 30 minutes. Serves 4 to 6.

BEEF SPANISH RICE -- Use same recipe, adding 1/2 lb of browned ground beef along with the rice.
